Ingredients
  • Shredded coconut, unsweetened (30g)
  • Zest from 2 lemons
  • Chia seeds (50g)
  • 2 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 1/2 Tablespoon melted coconut oil
Steps
  1. Put the shredded coconut and chia seeds into a food processor or mixing bowl. Blend them until the mixture is well combined.
  2. Add the coconut oil, vanilla extract, lemon zest and lemon juice into the mixture. Mix until the mixture sticks together. Pulse until it becomes a sticky dough.
  3. Use a tablespoon and your hand, roll the mixture between them to form balls.
  4. Roll them in the remaining shredded coconut. Repeat this step and power balls are ready.
