  • 1 cup diced fresh strawberries
  • 3 eggs
  • 1/4 cup melted coconut oil
  • 1/3 cup unsweetened vanilla almond milk
  • 2 1/3 cups almond flour
  • 2 tsp baking powder
  • 1/2 cup monk fruit sweetener
Steps
  1. Preheat the oven to 350 degrees. Add liners to a muffin tin and grease with oil spray.
  2. Add the eggs, unsweetened vanilla almond milk, and monk fruit sweetener into a bowl. Stir them until they blend well together.
  3. Stir in the almond flour and baking powder. Put in 1/2 cup each time. Make sure they are fully combined.
  4. Once mixed well, stir in the strawberries and coconut oil.
  5. Divide the batter evenly among the muffin tins.
  6. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
